PROFESSIONALS TRUST US – FOR A LIFETIME
The knife is the extension of the chef's arm. With the Premier Plus series, your knife works practically by itself. This gives you time not only to concentrate on your craft, but also to give your creativity free rein to create exciting dishes. This is exactly what trained professional chefs and our top chefs appreciate about the F. DICK brand - quality that will accompany you for a lifetime.

FORGED BALANCE
All Premier Plus knives are forged and perfectly balanced. Already during the development of the knives, we placed special emphasis on optimising the weight distribution between the blade and the handle so that the knife feels light and comfortable in your hand. Imagine your handle is too heavy or your blade too heavy. Your knife would always tend towards the heavy side and you would have to fight against the weight when cutting. This will certainly not happen with Premier Plus knives.

SHARP
The blade is made of the high quality X50CrMoV15 steel alloy. Each component of this steel has its own impressive features. Thanks to the high carbon content, the edge retains its sharpness for a particularly long time, the chromium content reduces wear and the molybdenum makes your knife particularly corrosion-resistant. We have also decided to polish the cutting edge to give the knives a special sharpness. Premier Plus knives are uncompromising in their design when it comes to sharpness. The food is cut exactly and not broken or squashed. This way, you work with precise, clean cuts, allowing the variety of flavours in the dish to come to the fore.

ERGONOMIC HANDLE
The Premier Plus knives support you in your kitchen adventures. Our special handle concept also speaks for itself: The handle and blade are joined together without gaps, making them particularly hygienic and easy to maintain. The handle feels comfortable and adapts to your hand thanks to its ergonomic design. This is important to prevent your hand from tiring quickly when you use the knife for a long time.

KNIFE CARE
All F. DICK knives deserve special care and attention when it comes to maintenance. Proper knife care is crucial. Knives that are forged or have a wooden handle should never be cleaned in the dishwasher. Knives with plastic handles are completely dishwasher safe; however cleaning in a dishwasher is much more aggressive than washing by hand.

The use of highly concentrated detergents, leaving the knives in hot steam for a long time and also the presence of certain food residues can lead to pitting on the blades or even corrosion. We recommend clean the knife by hand with a soft cloth and a mild alkaline detergent. Wipe your knife after cleaning to ensure that tit is thoroughly dry – this will prevent any pitting on the blade. You can occasionally maintain knives with wooden handles with food-safe oils (e.g. olive oil). The oil makes the handle nice and smooth and prevents shrinkage and cracks.

PROFESSIONAL KNIFE STORAGE
For your safety and to protect the cutting edges of the blades, we recommend that you store the knives in a suitable knife block or on a magnetic rail. When buying a knife block, make sure you buy one with enough space and horizontal slots to protect the knife blades. We recommend our own blade guard for storage in a drawer - Edge Guard. or alternatively, dimensionally accurate compartments built into the drawer.

HOW DO KNIVES STAY SHARP FOR A LONG TIME?
Knives stay sharp for a long time if they are only used for their intended purpose. The knives should only be used for cutting and not chopping. Bones or the like should therefore only be cut with a cleaver.

WOODEN OR PLASTIC CUTTING BASES
Hard surfaces such as stone (e.g. marble) or glass should not be used as a base, as they quickly blunt the knives.

Q: What is the F. Dick Premier Plus Filleting Knife best used for?

A: The F. Dick Premier Plus Filleting Knife is designed for precision filleting, skinning, trimming, and portioning of fish and delicate proteins where flexibility and edge control are critical. Its narrow, flexible blade allows operators to work closely along bones, skin, and connective tissue while minimizing waste and preserving product yield. In professional seafood counters, butcher shops, and commercial kitchens, this style of knife is valued for its ability to create clean cuts with less tearing and reduced resistance during long prep sessions. Beyond the technical features, what matters most is how this performs in daily production environments. The Premier Plus Series combines German blade craftsmanship with a forged construction and ergonomic handle design that supports accuracy, comfort, and repeatable cutting performance over extended shifts.

Q: Who should use the F. Dick Premier Plus Filleting Knife?

A: The F. Dick Premier Plus Filleting Knife is ideal for professional chefs, seafood processors, butchers, culinary students, and serious home cooks who require precise control when working with fish and fine proteins. For seafood-focused operations, the flexibility of the blade supports cleaner fillets and improved presentation quality. Butchers and prep teams also benefit when trimming silver skin, removing membranes, or portioning softer proteins that require more finesse than a rigid chef knife can provide. Whether used in a restaurant, fish market, catering kitchen, or culinary training environment, this knife is built for users who prioritize professional handling, edge retention, and long-term durability.

Q: Is the F. Dick Premier Plus Filleting Knife suitable for professional kitchens?

A: Yes. The F. Dick Premier Plus Filleting Knife is engineered specifically for demanding professional environments where precision, speed, and consistency matter. The forged Premier Plus construction delivers balance and stability while maintaining the flexibility required for filleting work. In busy production kitchens, this helps reduce hand fatigue while supporting accurate cuts during repetitive prep tasks. From a business perspective, the impact shows up in cleaner presentation, improved portion control, and reduced product waste, especially important in seafood and premium protein programs.

Q: Can the F. Dick Premier Plus Filleting Knife be used for trimming meat as well as fish?

A: Yes. While it is primarily designed for fish preparation, the knife is also highly effective for trimming meat, removing silver skin, and handling delicate butchery tasks. The flexible blade profile allows users to work efficiently around contours and connective tissue without removing excessive product. This makes it useful for butchers, meat processors, and chefs preparing beef, pork, poultry, or specialty proteins where precision trimming improves both appearance and yield. Operators looking for one precision knife that can support multiple prep applications often choose a professional filleting knife for this reason.

Q: Is the F. Dick Premier Plus Filleting Knife a good choice for culinary students?

A: Yes. Culinary students benefit from the knife’s balanced handling, professional-grade construction, and versatile precision capabilities. Unlike lower-grade training knives, the Premier Plus Series introduces students to the feel and control expected in commercial kitchens. This helps maintain texture integrity while reducing tearing and ragged cuts that can affect presentation quality. Combined with proper sharpening and maintenance, the blade is designed to deliver reliable cutting performance throughout demanding commercial use.

Q: What makes the Premier Plus Series different from standard filleting knives?

A: The Premier Plus Series combines forged German knife construction with professional ergonomics, balance, and long-term durability. Many standard filleting knives focus only on flexibility. Premier Plus adds structural strength, refined handling, and enhanced user comfort for professionals who use knives continuously throughout the day. The result is a more stable, controlled cutting experience during repetitive production tasks. That difference becomes especially noticeable in high-volume operations where comfort, edge retention, and reliability directly impact workflow efficiency.

Q: How durable is the F. Dick Premier Plus Filleting Knife in daily commercial use?

A: The knife is built for long-term professional use in demanding commercial environments. Its forged construction provides strength and balance while supporting consistent cutting performance under frequent use. The handle design is engineered for secure grip and durability, helping the knife withstand the pace of restaurant, butcher, seafood, and processing operations. With proper sharpening, storage, and sanitation practices, the knife is designed to remain a dependable part of a professional prep system for years.

Q: What results should operators expect when using the F. Dick Premier Plus Filleting Knife?

A: Operators can expect cleaner fillets, smoother trimming, improved precision, and better product yield. The flexible blade design supports close-contact cutting around bones and skin while minimizing unnecessary waste. For seafood applications, this can improve both visual presentation and usable product recovery. In practical terms, this means smoother workflows, more consistent prep quality, and greater confidence during detailed knife work.

Q: Is the F. Dick Premier Plus Filleting Knife comfortable for extended prep sessions?

A: Yes. The ergonomic handle design and balanced forged construction help reduce fatigue during long production shifts. Professional users often spend hours performing repetitive cutting motions. The Premier Plus handle shape supports a secure and comfortable grip that improves control while reducing strain on the hand and wrist. That combination is especially valuable in seafood preparation, butcher operations, and high-volume restaurant environments where comfort directly impacts productivity.

Q: Is the F. Dick Premier Plus Filleting Knife easy to maintain?

A: Yes. The knife is designed to integrate easily into professional knife maintenance routines. Regular honing and sharpening help preserve edge performance, while proper washing and storage support long-term durability. Because F. Dick also produces professional sharpening systems and accessories, the knife fits naturally into a broader professional blade maintenance workflow. Consistent maintenance ensures optimal cutting efficiency and prolongs the life of the blade.

Q: Does the F. Dick Premier Plus Filleting Knife require special sharpening tools?

A: No special sharpening tools are required, but professional sharpening systems and honing steels are recommended for best long-term performance. A high-quality honing steel helps maintain the edge between sharpenings, while professional sharpening systems restore blade geometry when needed. Many commercial kitchens pair F. Dick knives with F. Dick sharpening solutions for consistency across their knife program. Maintaining proper edge geometry is particularly important for flexible filleting knives because precision cutting performance depends heavily on blade sharpness.

Q: What types of kitchens benefit most from the F. Dick Premier Plus Filleting Knife?

A: Seafood counters, butcher shops, restaurants, catering kitchens, culinary schools, and specialty protein operations benefit most from this knife style. Any operation performing detailed trimming, filleting, or precision portioning can benefit from the control and flexibility this knife provides. It is particularly valuable where presentation quality and product yield are operational priorities. For operators working with premium proteins, precision tools often contribute directly to consistency, efficiency, and profitability.

Q: Is the F. Dick Premier Plus Filleting Knife better suited for occasional or high-volume use?

A: The knife is designed primarily for high-volume professional use. Its forged construction, ergonomic handling, and professional-grade edge characteristics are intended to support repeated daily prep work in commercial environments. While serious home cooks can absolutely benefit from its performance, the knife is fundamentally built around professional workflow demands. That makes it especially attractive for operations where reliability and consistency are non-negotiable.

Q: How does the F. Dick Premier Plus Filleting Knife compare to entry-level filleting knives?

A: The Premier Plus Series delivers higher-level balance, durability, ergonomics, and professional cutting performance compared with entry-level alternatives. Entry-level knives may work adequately for occasional prep, but they often lack the refined handling, forged stability, and long-term edge performance required in commercial production environments. Premier Plus is built for operators who rely on their knives continuously throughout the workday. For professionals, that difference often translates into improved comfort, cleaner cuts, and greater long-term value.

Q: How does the Premier Plus Series compare to stamped knife construction?

A: Premier Plus forged knives generally provide greater balance, structural strength, and stability than stamped alternatives. Forged construction helps create a more controlled cutting experience, particularly during precision work where blade handling matters. Many professionals prefer forged knives because they feel more substantial and stable during repetitive cutting tasks. In precision filleting applications, that additional control can improve both cutting accuracy and operator confidence.

Q: Is the F. Dick Premier Plus Filleting Knife reliable for continuous fish processing?

A: Yes. Seafood professionals value this knife for its flexibility, precision edge control, and ergonomic handling during repetitive filleting work. The blade geometry supports efficient movement along bones and skin while helping maximize usable yield. In high-volume seafood environments, consistency and speed are critical, and the Premier Plus design helps support both. Combined with proper maintenance, the knife is built to perform reliably across demanding daily production schedules.

Q: Does the F. Dick Premier Plus Filleting Knife improve plating and presentation quality?

A: Yes. Cleaner cuts and more precise trimming contribute directly to improved product presentation. The flexible blade allows chefs to create smoother portions with less tearing or surface damage, which is especially important when preparing premium fish or delicate proteins for visible plated presentations. In fine dining and upscale foodservice, presentation quality often begins during prep, and precision knife work plays a major role in achieving consistent results.

Q: Can the F. Dick Premier Plus Filleting Knife help reduce trimming waste?

A: Yes. The knife’s flexibility and precision help operators trim closer to usable product surfaces while minimizing unnecessary loss. This is particularly valuable when removing silver skin, trimming fat, or preparing higher-cost proteins where maximizing yield impacts profitability. Better knife control often leads to cleaner trimming decisions and more consistent portions. From a business perspective, precision tools can contribute meaningfully to operational efficiency over time.

Q: Is the F. Dick Premier Plus Filleting Knife too advanced for home use?

A: No. While it is built for professionals, serious home cooks who value premium tools and precise knife work can benefit greatly from its performance. Users who regularly prepare whole fish, premium meats, or detailed trimming projects will appreciate the knife’s control, balance, and cutting efficiency. It delivers a professional-level experience while remaining approachable for skilled enthusiasts willing to maintain their tools properly. Whether in a restaurant or a home kitchen, the right knife changes how preparation feels and performs.
