DURABLE SHARPNESS
X30Cr13 is the secret of the high-quality stainless steel and delivers durable sharpness thanks to its individual qualities. The forged knives in the ActiveCut series are honed twice during the final sharpening process – this gives them their special sharpness.

PERFECT FOR THE PROFESSIONAL KITCHEN
The knife fits comfortably in your hand. The handle is made of a non-slip and abrasion-resistant material, preparing you for all challenges in the kitchen. Now, wet hands and hygiene are no longer a problem. The handle and the blade are joined without gaps and therefore absolutely hygienic. In addition, the ActiveCut knives are perfectly balanced, which means that this knife's centre of gravity is exactly in the middle of the knife, between the blade and the handle. This supports you in your daily tasks and saves your strength.

MADE IN GERMANY
The ActiveCut series is made in Germany. A good knife requires many work steps. Our ActiveCut knives go through numerous production steps at our Deizisau site before they are finished. Starting with the machining of the steel and right through to the finishing of the cutting edge.

KNIFE CARE
All F. DICK knives deserve special care and attention when it comes to maintenance. Proper knife care is crucial. Knives that are forged or have a wooden handle should never be cleaned in the dishwasher. Knives with plastic handles are completely dishwasher safe; however cleaning in a dishwasher is much more aggressive than washing by hand.

The use of highly concentrated detergents, leaving the knives in hot steam for a long time and also the presence of certain food residues can lead to pitting on the blades or even corrosion. We recommend clean the knife by hand with a soft cloth and a mild alkaline detergent. Wipe your knife after cleaning to ensure that tit is thoroughly dry – this will prevent any pitting on the blade. You can occasionally maintain knives with wooden handles with food-safe oils (e.g. olive oil). The oil makes the handle nice and smooth and prevents shrinkage and cracks.

PROFESSIONAL KNIFE STORAGE
For your safety and to protect the cutting edges of the blades, we recommend that you store the knives in a suitable knife block or on a magnetic rail. When buying a knife block, make sure you buy one with enough space and horizontal slots to protect the knife blades. We recommend our own blade guard for storage in a drawer - Edge Guard. or alternatively, dimensionally accurate compartments built into the drawer.

BLADE GUARD FOR KNIVES
Blade guard – Edge Guard, the special blade guard for storage, especially in drawers. Click here to see the blade guard for blades up to 26 cm.

KNIFE BLOCK FOR KNIVES
Knife block: Knife block with tourne knife, paring knife, boning knife, carving knife, bread knife, chef's knife, meat fork, sharpening steel and kitchen shears.

HOW DO KNIVES STAY SHARP FOR A LONG TIME?
Knives stay sharp for a long time if they are only used for their intended purpose. The knives should only be used for cutting and not chopping. Bones or the like should therefore only be cut with a cleaver.

WOODEN OR PLASTIC CUTTING BASES
Hard surfaces such as stone (e.g. marble) or glass should not be used as a base, as they quickly blunt the knives.

Q: Is the F. Dick ActiveCut Carving Knife good for culinary students and apprentice chefs?

A: Yes. The ActiveCut Series was specifically designed with culinary training and apprenticeship environments in mind. New cooks benefit from the knife’s balanced feel, ergonomic grip, and predictable handling characteristics. Unlike lower-grade entry-level knives, the ActiveCut line provides a more authentic professional cutting experience, helping students transition more naturally into commercial kitchens. At the same time, the knife remains practical and approachable enough for schools, training kitchens, and developing culinary programs. Whether you run a busy operation or a serious home kitchen, the right equipment changes everything.

Q: How sharp is the F. Dick ActiveCut Carving Knife?

A: The F. Dick ActiveCut Carving Knife delivers professional-grade sharpness designed for clean, controlled carving and slicing performance. The blade uses German X50CrMoV15 steel hardened to professional standards, helping the edge maintain cutting efficiency through repeated use. The narrow carving profile also minimizes resistance during slicing, which helps produce smoother cuts on brisket, turkey, roast beef, ham, and other proteins. In practical terms, this means operators can maintain cleaner cuts with less pressure, helping reduce shredding or compression of delicate meats during presentation and portioning. That combination of sharpness and controllability is one reason F. Dick remains widely respected across professional culinary and butcher environments.

Q: What results should users expect from the F. Dick ActiveCut Carving Knife?

A: Users should expect clean slices, strong edge control, improved presentation quality, and comfortable handling during repetitive carving work. A carving knife is not simply about sharpness. The blade length, flexibility balance, edge geometry, and weight distribution all influence how consistently proteins can be sliced. The ActiveCut Series is engineered to support long, fluid slicing motions that help preserve texture and appearance. For foodservice operations, cleaner cuts can also support more consistent portioning and reduced product waste. For catering and front-of-house carving stations, the visual presentation benefits become especially important. Great food presentation starts long before service with the preparation tools behind the menu.

Q: How durable is the F. Dick ActiveCut Carving Knife for daily commercial use?

A: The F. Dick ActiveCut Carving Knife is built for reliable daily use in professional foodservice and butcher environments. Its forged construction and professional-grade German steel help the knife withstand repetitive cutting tasks common in commercial kitchens. The handle is designed for secure grip and long-term comfort, while the blade construction supports routine sharpening and maintenance. Professional kitchens need knives that can maintain performance over time rather than simply feeling sharp out of the box. That is where F. Dick’s long-standing reputation in professional culinary and butcher industries becomes a real advantage. With proper sharpening and storage practices, this knife is well suited for ongoing commercial operation.

Q: Does the F. Dick ActiveCut Carving Knife help improve portion consistency?

A: Yes. The long carving blade helps operators produce more uniform slices and cleaner portions during service and prep. Consistent portioning matters for food cost control, plate presentation, buffet carving stations, deli counters, and banquet production. The knife’s narrow profile supports smoother slicing motions that reduce drag and help maintain slice thickness more evenly. For catering teams and hospitality operators, that consistency can improve both visual presentation and operational efficiency during peak service periods. From a business perspective, better portion control contributes directly to product consistency and profitability.

Q: Is the F. Dick ActiveCut Carving Knife comfortable for extended use?

A: Yes. The knife is designed with ergonomic handling characteristics intended for repetitive professional use. Long carving sessions can create hand fatigue when a knife is poorly balanced or uncomfortable to grip. The ActiveCut Series focuses on practical ergonomics that help support control and comfort during continuous slicing tasks. This becomes especially important in butcher shops, banquet kitchens, catering operations, and prepared-food departments where operators may perform repetitive carving throughout the day. Combined with proper knife technique, the ergonomic design supports smoother workflow and improved user comfort.

Q: Is the F. Dick ActiveCut Carving Knife easy to sharpen?

A: Yes. One of the advantages of the ActiveCut Series is that it is designed to be practical and straightforward to maintain. Professional users often prioritize knives that can be resharpened efficiently without excessive complexity. The X50CrMoV15 steel used in the ActiveCut Series balances edge retention with manageable sharpening characteristics, making it well suited for commercial environments. F. Dick’s broader professional sharpening ecosystem also supports long-term knife maintenance through sharpening steels, systems, and accessories commonly used in butcher and culinary operations. In practical terms, this means less downtime and more predictable cutting performance over the life of the knife.

Q: Is the F. Dick ActiveCut Carving Knife dishwasher safe?

A: While the knife may physically withstand dishwasher exposure, professional knife care standards strongly recommend hand washing and immediate drying. Commercial dishwashers can accelerate edge wear, impact handle longevity, and increase the risk of blade contact damage during wash cycles. Hand cleaning helps preserve sharpness, cutting performance, and overall knife lifespan. Professional kitchens typically treat carving knives as precision tools rather than general utensils. Proper storage, hand washing, and routine honing help maintain long-term performance. When you are ready to upgrade performance on the line and in the display case, professional knife care becomes part of the investment.

Q: What type of foods is the F. Dick ActiveCut Carving Knife designed to handle?

A: The knife is best suited for cooked meats, poultry, roasts, brisket, ham, turkey, and other large proteins requiring precise slicing. Its carving-focused blade profile is optimized for slicing rather than heavy chopping or bone work. That specialization helps produce cleaner cuts and better presentation results compared with general-purpose chef knives. In catering, banquet, deli, and hospitality environments, this makes the knife especially useful for carving stations and plated-service preparation where visual consistency matters. Using the correct knife for the application also helps improve safety, efficiency, and overall cutting control.

Q: How does the F. Dick ActiveCut Carving Knife compare to entry-level carving knives?

A: The ActiveCut Series delivers a more professional cutting experience than most basic entry-level carving knives. Compared with lower-cost alternatives, users typically notice better balance, stronger edge stability, improved ergonomics, and easier long-term maintenance. The forged construction also contributes to a more controlled and confident cutting feel during carving work. Many entry-level knives prioritize low acquisition cost over long-term workflow performance. The ActiveCut platform instead focuses on practical professional usability while remaining accessible for training kitchens and growing operations. That balance makes the series especially attractive for culinary schools, apprentice chefs, and operators upgrading from economy-grade cutlery.

Q: How does the F. Dick ActiveCut Series compare to premium F. Dick knife series?

A: The ActiveCut Series focuses on practical professional performance and training-oriented value, while premium F. Dick series place greater emphasis on luxury finishes, advanced aesthetics, or specialized craftsmanship. Operators choosing ActiveCut typically prioritize reliability, ergonomic comfort, edge performance, and maintenance practicality. Premium lines such as 1905 or 1778 may offer more refined finishes, upgraded materials, or collector-level presentation. For many kitchens, however, the most important factor is dependable daily performance. That is exactly where the ActiveCut Series performs exceptionally well. Professionalism is core to everything Food Supplies delivers through its curated premium brand portfolio.

Q: What makes the F. Dick ActiveCut Carving Knife different from a chef’s knife?

A: A carving knife is specifically optimized for slicing cooked proteins, while a chef’s knife is designed as a broader all-purpose kitchen tool. The longer, narrower carving blade allows smoother slicing motions with less tearing or compression of meats. A chef’s knife, by comparison, is generally shorter and wider to support chopping, dicing, and multipurpose prep work. For operators focused on presentation quality, carving efficiency, or banquet service, a dedicated carving knife offers better control and cleaner slicing results than relying solely on a standard chef’s knife. Using the correct specialized tool helps elevate both workflow and finished presentation.

Q: Is the F. Dick ActiveCut Carving Knife reliable during high-volume service?

A: Yes. The knife is well suited for catering and banquet environments where consistent carving speed and presentation are essential. Catering teams often work under tight timing constraints while maintaining visual quality across large volumes of plated or buffet-served proteins. The knife’s slicing geometry supports fast, fluid carving motions that help maintain consistent portions during service. Its ergonomic handling also helps reduce fatigue during extended carving sessions, particularly at live carving stations or banquet preparation lines. From back-of-house efficiency to front-of-house presentation, reliable carving tools directly support smoother execution.

Q: Does the F. Dick ActiveCut Carving Knife support merchandising presentation?

A: Yes. Clean slicing and consistent cuts can significantly improve product presentation in retail and prepared-food environments. At deli counters and butcher displays, visual appeal directly influences perceived freshness and quality. The ActiveCut Carving Knife helps create cleaner slices that present proteins more attractively while supporting portion consistency. The knife’s professional handling characteristics also support repetitive daily use common in retail meat and prepared-food operations. That combination of presentation quality and workflow practicality is why professional-grade carving knives remain important in merchandising-focused environments.

Q: Is the F. Dick ActiveCut Carving Knife a good training knife?

A: Yes. The ActiveCut Series is particularly well aligned with culinary education and apprenticeship programs. Students benefit from learning on knives that reflect professional balance, edge geometry, and handling standards used in commercial kitchens. At the same time, the series remains practical enough for institutional purchasing and routine training use. For instructors, the knife provides a dependable platform for teaching slicing technique, knife safety, and proper carving fundamentals. Choose proven brands, expert guidance, and professional tools that help build long-term culinary confidence.

Q: Does the F. Dick ActiveCut Carving Knife fit into fast-paced prep workflows?

Its practical maintenance characteristics also make it easier for kitchens to keep the knife service-ready throughout daily operation. In practical terms, this means smoother workflow, cleaner presentation, and more reliable performance during busy service periods.

Q: Is the F. Dick ActiveCut Carving Knife too professional for serious home cooks?

A: No. While designed for professional use, the knife is also well suited for serious home cooks who value professional-quality tools and precise carving performance. Home users preparing holiday roasts, smoked brisket, poultry, or large proteins often benefit from using a dedicated carving knife rather than general-purpose kitchen knives. The ergonomic design and balanced handling help make carving more controlled and enjoyable.
