Back bacon or peameal bacon as it is known here in Canada and Canadian bacon as it is known to our American friends, is made from the boneless pork loin with the fat trimmed to 1/8" and cured in a sweet pickle brine. Food Supplies Yellow Cornmeal is an essential ingredient used to finish this traditional meat to create a product that is less salty than regular bacon with a touch Canadian of sweetness. The loin is rolled in Food Supplies Yellow Cornmeal giving it the signature 'peameal' coating.

  • Cornmeal is used in breads, pancakes, and muffins.
  • Cornmeal is also used in cookies and other desserts.
  • Sprinkle on the bottom of baking pans to prevent breads and pizzas from sticking.
  • Give cornmeal a nuttier flavour by toasting it in a dry skillet until golden brown. Let cool and add to cornbread and other baked goods.
  • Mix cornmeal into bread and muffin batters by hand to avoid over mixing. A few lumps will make your baked goods more rustic and flavorful.
